Here I show you how to make aged cheese from Organic Raw Grass Fed Milk. Dairy is an excellent source of b12 for those on a plant based diet who are avoiding blood and meat. Milk has been used in Ayurveda for centuries and was considered the “perfect food”. Ayurveda calls for milk to be boiled in order for it to become more digestible to humans. In its raw form, the milk proteins (casein) can be hard to digest by some but boiling alters the protein structure and allows for easier digestion. Raw milk was only consumed if an individual was extremely sick. Thus, the boiling process as shown in the video makes the casein more digestible. Also, aging reduces the lactose found in milk. Aged cheese (over 60 days and more) are generally lactose free. Cinnamon, ginger, and turmeric can also be added during the heating and boiling process in order to add further digestibility to the cheese. ENJOY!
