History of Superfoods – Maca + Easy Magic Maca Cookies Recipe

Makes 3 1/2 Dozen Cookies

1 cup raw Almonds
1 cup soft Medjool Dates (about 15-16), pitted
¼ cup unsweetened Shredded Coconut
2 Tbsp Navitas Naturals Maca Powder
1/8 tsp Sea Salt
2 Tbsp Navitas Naturals Cacao Nibs

In a food processor, grind the almonds into a coarse flour. Add the remaining ingredeints and process until a sticky dough has formed. Stop the machine and test the consistency: dough should stick together easily and be pliable enough to form into cookies. If not (due to drier dates), add a little water – about 1 teaspoon at a time – until dough is at the right texture.

Spoon out a small amount of dough in about a rounded teaspoon portion, and use your hands to form a ball. Repeat with the remaining dough. Lightly oil the bottom of a glass and press the balls lightly to flatten them into “cookies.” In a sealed container, cookies will last for several weeks at room temperature.
