– 2-3 ripe bananas
– 1 whole pineapple
– 2 kiwifruit
– 5 dates
– 1 sachet green powder + I also added in 2 tsp spirulina
– 1 cup coconut water (I use cocobella, tastes the best to me)
BLEND UNTIL SMOOTH! Topped mine with banana, strawberries, buckwheat, almonds, coconut flakes & alter eco chocolate.
LUNCH: SUSHI
– 2 nori sheets
– 4-5 cups rice
– 2 tbsp Rice vinegar
– 1 tbsp sweetener of your choice
– 1 cucumber, thinly sliced lengthways
– 1 carrot, peeled and thinly sliced lengthways
– 1 avocado, thinly sliced
– 1/4 packet extra firm tofu (the one I’m using is a chinese five spice one that I marinated in a bit of soy sauce)
– 1 tbsp sesame seeds
Method:
1) In a large plate, add rice. Add in rice vinegar & sweetener to taste (you can use maple syrup, agave… etc) and fold through evenly
2) Place nori sheet shiny side down on a sushi mat
3) Add on rice, gently push down onto nori sheet, leaving a 2cm gap on the furthest end of the nori sheet (away from you)
4) Place all your fillings in the middle of where the rice is (i.e. ignore the gap and find the centre of the rice covered part)
5) Holding onto the fillings, roll the mat over and ensure that your end (the one closest to you) just reaches the further end where the rice ends (idk if this makes sense but you’ll see in the video)
6) Dab some water onto the 2cm gap at the end before continuing to roll it, sealing the ends
7) Repeat with another roll or with another however many rolls and enjoy!!! Remember when slicing your rolls, make sure you’re using a sharp knife and you should try clean your knife/dampen it with a little bit of water in between to avoid it from sticking and ruining the cut
