I have to admit these are my Favorite type of cupcake I have made. They have it all chocoalte, marshmallow, coconut and a jam centre. You need to give these a go.the cracking noise is the fire in the background when i recorded the voice over

Oven: 170c/ 338 F/ Gas Mark 5
Ingredients:
For The Cupcake:
125g (1 CUP) Plain Flour (use gluten free flour mix if needed)
125g (1/2 CUP) Caster Sugar
50g Cocoa Powder
125g (9 tablespoons) Butter
2 Eggs
1 teaspoon Baking Powder (use gluten free baking powder if needed)
Jam of your choice: I used strawberry
For The Icing:
3 egg whites
260g (1 & 1/4 CUPS + 1 TABLESPOON) Caster Sugar
1/4 teaspoon Of Creme Of Tartar
6-7 Tablespoons of Golden Syrup or Corn Syrup
Pinch Of Salt
Chocolate:
375g (2 &1/4 CUPS) Chocolate
2 tablespoons veg oil
100g (1 CUP) Desiccated coconut
