Utilizing quinoa, one of the most popular “super foods,” and a wide array of fresh vegetables, this tasty bowl is packed with protein and the perfect way to start your day.
– 2 tablespoons of olive oil.
– 2 green onions thinly sliced.
– 2 cups of either baby spinach or kale.
– 1 small tomato (1/4 inch diced).
– 1 cup of cooked quinoa.
– 1 egg.
– 2 tablespoons of salsa.
Start by heating the pan with the olive oil and quickly cooking the onions and spinach, adding a dash of salt and pepper. Once cooked, add the tomato and mix before adding the veggies into the bowl with the quinoa. Make sure the quinoa and veggies are split in the bowl. Fry the egg with salt and pepper to taste then top with salsa.
